Breakfast Protein Bites

It’s sometimes hard to have the time to be healthy… I’m always in a rush, always on the go.  Because I don’t eat much meat (just fish), I find it very hard most days to get enough protein without making a serious effort. These mini veggie omelettes have been my “go to” lately. I’ve tried a bunch of recipes on Pinterest, and decided that I needed to create one of my own. These are super yummy, and cheap to make! They only take 30 minutes including baking time, and are very little effort. I keep them in the fridge. When I’m ready to eat them, I just pop two or three in the microwave for a minute, or eat them cold. I make enough for 4 days at a time… if we don’t go through them sooner than that.


(Makes 12 servings)


  • 12 eggs
  • garlic to taste
  • salt and pepper to taste
  • 1 cup spinach
  • 1/2 cup mushrooms
  • 1 cup diced white/yellow onions
  • 1/4 cup green onions
  • 4 breakfast veggie sausages (I used morning star)
  • 3 slices vegan cheese or a light cheese (or no cheese 🙂 )
  • cooking spray (I used coconut oil in a spray can)


  1. Preheat oven to 350 degrees F
  2. Spray 12 cup muffin tin with cooking spray
  3. Cut veggie sausages into thirds and place a piece in each cup
  4. Cut up all veggies and fill each cup with your desired amount (except for green onions)
  5. Mix eggs, garlic, salt, and pepper in separate bowl, and pour into cups evenly
  6. Bake for 20 minutes at 350F
  7. Let cool for 15 minutes
  8. When you’re ready to eat… top with 1/4 slice of cheese (if you want) and green onion
