Sushi Salad!

Im super excited about this sushi salad recipe I threw together today! It’s so easy to make that it may be my new go-to for pot lucks this summer!

Since summertime is just around the corner, I’m cutting down on the simple carbs. It’s crunch time for beachwear and I’m feeling like I need to be filling my diet with healthy refreshing foods that will keep me full! This sushi salad is exactly that! Feel free to add in any fish you have on hand (I just happened to have a pound of imitation crab in my fridge) and add in all of your favorite sushi goodies! (Caviar would be AMAZING in this!)


1 lb. imitation crab (or real crab if you’re feeling fancy πŸ™‚ )

12 oz. edamame soy beans (cooked, chilled & out of pod)

5 persian cucumbers

1 cup julienne carrots

3-5 green onions

1 tsp. Sesame seeds-or to taste (I actually used T.J.’s “everything but the bagel sesame seed mix”)

2 avocados

For dressing:

2 tbs. soy sauce

wasabi-to taste (paste or powder, it doesn’t matter)

tbs. olive oil

1 tbs. red wine vinegar

Juice of 2 limes

1/2 tsp garlic powder

1/2 tsp black pepper



Cut up everything, and mix it in a bowl (super easy!) I garnish mine with the green onions, sesame seeds, and 1/4 of an avocado, but feel free to mix those in if you’re serving to a big group!
